Admit it. The name is enticing. When one says hokey pokey the first thing that is normal to reminisce is the hokey pokey song & dance. You know when you put your left leg in and you put your left leg out…do the hokey pokey and turn yourself around…etc.
Until few months ago I didn’t know you can actually eat hokey pokey. Well now I do and I must say just like the tune it’s sweet and addictive.
Ingredients
½ cup of Caster Sugar
4 Tbs of Golden Syrup
1 ½ Tsp of Baking Soda/ Bi Carbonate of Soda
Directions
Grease some foil paper and set aside.
In a heavy based pan add the sugar and golden syrup and stir together to mix.
Now turn on the stove and start heating up the mixture on a medium low flame. Do not stir the contents; let it melt on its own.
When the mixture starts to turn golden brown (maple syrup colour) take it off the heat.
Add the baking soda in to the pan and start whisking the syrup.
Once it’s thickened up, pour it on to the greased foil, wrap it up and let it set.
After it has set, bash it in to pieces.
Disasters, Warnings and Tips
To get ‘caster’ sugar, just put your every day sugar through the food processor.
This is a perfect snack for those who love sticky toffee based desserts.
Call it cliché but I was doing the hokey pokey while making the hokey pokey.
Let the sugar melt in with the syrup but don’t let it burn.
I prefer to eat this with a scoop of Vanilla Ice Cream.
Washing the pan is the tough part of this process. Soak it in water for a while before attacking it with your sponge.
