Recipe: Masala Paneer

Well with the start of the New Year thus begins the period of self-evaluation and new resolution time. Whatever your latest fad is, be it to eat healthy, eat more vegetables, eat less sweets or cut down on the fizzy drinks, why not take a moment and have snack on my masala paneer whilst you decide which fad you will partake in this year.
 
My masala paneer with its rich tomato sauce speckled with chunks of molten paneer are a visual as well as sensory delight, wooing all your senses. A dish not to missed by your whole family. Enjoy!
 
 
 
Ingredients
 
One large onion cubed
 
2-3 green chilies chopped
 
2-3 garlic cloves and one stick of ginger – crushed
 
A sprig of curry leaves
 
Turmeric powder
 
Handful of coriander
 
4 tomatoes chopped
 
1 packet of paneer
 
Jar of tikka masala paste
 
Tomato paste
 
Cinnamon
 
 
 
Method
 
Firstly take your packet of paneer and cut it into tiny rectangles. Pan fry until the outer surface of each piece is golden brown. Drain on a paper towel and set aside.
 
To make the curry, into a hot pan, add a tablespoon of oil and add your ginger garlic paste, onions and curry leaves. Toss and cook until the onions are nicely translucent, be careful not to burn them.
 
To this mixture add 2 to 3 tablespoons of tikka masala paste.
 
Then add your cinnamon, green chilies and chopped tomatoes, cook until tomatoes have started to breakdown, then add two tablespoons of tomato paste, a pinch of turmeric and stir through, adding about a cup of water as you mix everything together, if you need more water add some more but the tomatoes once cooked will create a nice sauce.
 
If you wish to make the dish a bit ricjer you can add some coconut milk.
 
Season with a pinch of sugar, salt and pepper. You can also add some crushed chilies if you prefer it to be more spicy.
 
Once everything has broken down and the sauce is coming together, add your chunks of paneer and stir through for the last few minutes of cooking.
 
Lastly add your handful of coriander leaves and serve along side some delicious cucmber raita, flat bread and some basmati rice. A dish to spice up your evening!
