Recipe: Hot Fudge Cookie Cupcakes

With the onset of the summer school holidays begins the daily early morning ritual of ‘what are we doing today MUM’. As much as I love my off-spring, by day three I am ready to scream and run off into the sunset if I hear this sentence uttered one more time.
 
A bit drastic you say, but as the saying goes, you can only judge a man once you’ve been in his shoes. So on a lonely harassed morning, I happened to stumbled upon this excitingly inviting recipe that had my whole family aghast at it’s tantalizingly deliciousness.
 
Rallying the children around, we gathered up the simple ingredients and were quite quickly knee deep in chocolate. Licking the leftover bowls bone dry, the fun and laughter ran loud and fierce through the house.
 
This is what summer holidays are all about, ice-cream, chocolate and smiles. Make this deliciously addictive dessert for your family and keep them cool and happy!
 
 
Ingredients
 
1 pkg. KALO cookies with the cream attached (looks just like OREO’s)
 
¼ Cup melted Butter
 
½ gallon Vanilla Ice Cream or any flavor you choose
 
Whipping cream
 
Toasted nuts
 
 
Hot Fudge Sauce
 
1 can of Condensed Milk 
 
1 stick of Butter
 
1 tsp. Vanilla
 
1 cup of dark chocolate broken into bits
 
 
 
Method
 
Place biscuits in a ziplock bag and using a rolling pin crush then into chunky pieces. Then combine with melted butter.
 
Now place some baking cups into your cup cake pan and press a handful of crushed cookie mixture into the bottom of each cupcake wrapper. Reserve at least 1 cup of crumbs for later.
 
Now make the hot fudge sauce. Mix all the ingredients in a saucepan over low heat until melted through completely and a rich sauce has formed.
 
Leave the ice-cream out until it becomes soft. Then place a dollop of ice-cream in each cupcake mould and top with a few more of the cookie crumb mixture.
 
Drizzle with Hot fudge Sauce and sprinkle toasted nuts on top if desired.
 
Whip the cream until it is light and fluffy and spread on top of each cupcake. Cover and return to freezer.
 
Once ready to consume, remove from mould and enjoy to one’s hearts content!
