Recipe: Coconut Frushi

I am always looking at ways to make fruit a constant medium in my children’s diet and Coconut Frushi or fruit sushi has been the perfect solution.
 
My children say they love the everyday normal sushi, but give them some and they are quick to dismantle the artistically made piece to bits, gobble down the rice and run off saying the other bits are still alive. YUK!!!
 
So Coconut frushi still offers then the selection of the sweet sticky rice but is now coupled with a delectable piece of fruit, which instead of soy sauce they can now dip in honey or flavored yogurt.
 
I also do not have to worry about how fresh the sushi is, for after all its all FRUIT, so all in all a win win situation for everyone. Give it a try, coconut frushi, rocks!
 
 
Ingredients
 
Sushi rice or thai jasmine rice
 
¼ cup of sugar
 
¼ of light coconut milk
 
Dash of salt
 
Selection of fruit, chopped strawberries, orange slice, dollop of passion fruit etc
 
 
Method
 
Cook rice accordingly. Remove from heat, let stand, covered for 15 minutes. In a bowl mix together the sugar, salt and the coconut milk.
 
Stir until completely mixed through, cover and let stand for 20 minutes.
 
Slightly wet your hands with a little bit of oil and take a table spoon of rice, make into a ball and set on a plate.
 
Once you have the enough number of sushi balls, top with your desired fruit.
 
Serve with honey or a yogurt dip. It’s another creative way to get our kids to eat FRUIT!!!Go bananas!!!
