Recipe: Caramel Brownies

Once in a while there comes along a dessert so rich and enticing that it will leave all your senses floored in a fixture of sweetened ecstasy. One such is in the form of my family's favourite Caramel Brownies.
 
The sweet gooey caramel encased in a comforting blanket of rich moist chocolate is a marriage made in dessert heaven.
 
A batch of these are so versatile as a teatime treat, a lunchbox essential or if accompanied with a dollop of ice-cream, a decadent dessert.
 
 
Ingredients
 
1 cup of unsalted butter
 
12oz bittersweet chocolate
 
1 ½ cup of sugar
 
4 large eggs
 
1 tbsp of vanilla extract
 
1 ¼ cups of flour
 
½ tsp of salt
 
1 ½ cups of chopped nuts (optional)
 
1 cup of semisweet chocolate chips
 
14 oz of caramel candies
 
1/3 cup of heavy cream
 
 
 
 
Method
 
First preheat the oven to 350 degree and get the pan ready, by spreading a thin layer of butter and lining it with baking paper. This will make it easier to get the brownies out once they are done.
 
Then in a heatproof bowl, melt the chocolate and butter together over a simmering pan of water. Make sure you stir until all the chocolate is melted.
 
Remove the bowl from the heat and allow to cool for a few minutes, do not cool completely otherwise the chocolate will harden.
 
Then whisk in the sugar, eggs and vanilla until completely incorporated.
 
Lastly stir in the flour and the salt and keep whisking until everything is combined and the brownie batter is formed.
 
Pour half the batter into a brownie dish and bake for 20 minutes until it is done.
 
Whilst the brownie layer is cooking, in a pan melt the caramel candies along with a cup of cream, stir until it is completely melted through. If you like you can stir in some chopped nuts but make sure you act quickly before the caramel starts to harden again.
 
Spread your prepared caramel mixture onto the cooked brownie layer. Top with the remaining brownie batter and cook in the oven for another twenty minutes until the brownie layer is cooked through.
 
Once cooled, lift the baking paper out and cut into gooey melting squares. Forget those diets and give into those love handles, these brownies are to be indulged in without reservation!
