This recipe is so easy to make that it was initially recommended that it be cooked in the microwave in a couple of minutes, but I think baked in the oven until it is golden and yummy is a much better if not more tastier option.
What I also like about this recipe that I usually have all the ingredients lying around in my kitchen and there are no sudden dashes to the grocery store, when you have company stop by midweek. Thus your entertaining meal can be finished off in a magnificent culinary ‘bang’ for this recipe with leave your guests taste buds in a weakened state of gastronomical delight. Excuse the pun, but they’ll simply go bananas!!!
Ingredients
100g butter, softened, plus extra for greasing
2 ripe bananas
100g brown sugar
100g flour
¼ teaspoon of baking powder
2 tsp ground cinnamon
2 eggs
2 tbsp milk
Method
First turn the oven on to 180 degrees.
Put the butter in a bowl and microwave for a few seconds. In to the melted butter, add the bananas, sugar, flour, cinnamon, eggs and milk. Mix together well.
Pour into a baking dish and place in the oven for a good fifteen minutes or until the mixture is cooked through, watch the pudding carefully to make sure it doesn’t burn.
Scatter some sliced bananas on top and sprinkle with some extra brown sugar.
This pudding can be enjoyed all on its own or with a dollop of vanilla ice-cream. Delightfully sinful!
