RECIPE: Banana Pikelets

The danger of having a large family is that inevitably the culinary requests are numerous and varied. One doesn’t like onions whilst the other wants ketchup on everything and with the baby moving on to solids I have to get the combination right otherwise her mouth stays firmly shut and my culinary efforts are gone to waste.

Therefore I was thoroughly excited to come across this recipe for banana pikelets. There are essentially pancakes which are quite popular in Australia but with an added secret ingredient, bananas. Thus the common pikelet is filled with nutrients giving growing kids all the essential requirements.

This healthy snack is very versatile and can be included in lunchboxes or dressed up with slashings of chocolate sauce for an after dinner feast. Make a pikelet today and get your family to love you even more!

 

 

Ingredient

-          2 cups flour

-          ½ teaspoon of baking soda

-          Pinch of salt

-          1/3 cup sugar

-          ½ tablespoon of butter

-          2 eggs beaten

-          1 ½ cups of milk

-          2 bananas mashed

 

 

Method

 

1.       In a bowl sift together flour/baking soda and salt.

2.       Whisk in sugar, butter, eggs and milk until smooth. I like to leave the mixture to sit for about half an hour so the baking soda can do its magic and make the pikelets more fluffy .

3.       Lastly add the smashed bananas.

4.       Now make as you would cook pancakes, when pikelets bubble on top, flip and cook on the other side until brown.

 

These can be eaten hot or cold and with any topping you like from chocolate sauce to stewed fruit to even a dollop of ice-cream!
