In Italy they call it ‘Aglio E Oli’, but in my house I call it pasta that never lasts! It is also easy to make, which is one of the main criteria for any recipe that I indulge in, and the kids gulp it down without any second persuasion.

It can be eaten hot or cold and a great accompaniment with roasted meats or a healthy salad. A surefire way to provide your family with a healthy evening meal.

Ingredients

Thinly chopped or crushed garlic

Chili flakes

Salt and pepper to taste

Olive oil

Lemon juice

Fresh herbs (optional)

Grated parmesan cheese (available usually at Arpico)

Spaghetti

Directions

Take your spaghetti and boil until firm-tender. Spaghetti works best with this dish since the sauce nicely coat the pasta, but if you prefer to use a pasta that is available in your kitchen cupboard at that time, that is fine as well.

In a skillet, heat some olive oil and lightly fry half of the minced garlic, be careful that it does not burn.

Turn off the heat, add the pasta, the remaining garlic, a few squirts of lemon juice, chili flakes, salt and pepper, and as much parmesan cheese as you like. You can also add some fresh herbs if you fancy BUT when cooking for my kids anything green in their food is alien like and not to be indulged in!!!

Toss well and eat immediately!

I also find that since we are not over cooking our pasta, it can be kept and eaten cold as well.

Whatever you preference, have a try of my pasta that never lasts, that’s what we’re having tonight!
