Having lived a decade in Italy working as an assistant in a restaurant, Thusara Sanjeevani better known as Asintha, fell in love with Italian food. The aroma of the fresh herbs and tomato and olive oil based sauces makes it easy to fall in love with this delectable cuisine.

It’s been eight years since Asintha and her husband returned to their native Sri Lanka. After getting back Asintha always missed the flavours of authentic Italian food, “This was the reason I decided to make my own and after a few people tasted my food they encouraged me to open up a restaurant,” she said. “My husband always wanted to start up a restaurant when he got back but I didn’t have such an ambition as I was always occupied with our kids.” Eventually Asintha felt it would be a good idea to give Sri Lankans a taste of what authentic Italian food tastes like and this was how Pasta Hut in Nugegoda came about.

The restaurant has been in operation for eight months now and serves anything from pasta, to salads, grilled items and of course thin crust pizzas. They even have the option of take away and delivery.

Asintha stressed the importance of using fresh as well as good quality ingredients for her dishes of which the post popular ones are her freshly made Ravioli, Lasagne, Prawn Carbonara as well as their Bacon and Cheese Pizza.

Tomatoes, which are important in Italian cooking are imported from Italy as those that grow in Sri Lanka are more acidic. They also import various cheeses, Parma Ham, salami, olives, olive oil and lamb while a local farmer provides them with herbs like basil and oregano.

“I go through these minute details as I want to make it as authentic and healthy as possible while recreating the real Italian flavours that I am used to and the ingredients I use are so important towards making these dishes.” From the breads to some of the pastas everything is made in house, while the meats and fish items are bought fresh on a daily basis.

When we walked in for the review we thought we’d be able to taste one or maybe two items on the menu, instead Asintha and her staff laid out an entire table for us starting with the Four Cheese (Mozzarella, Parmesan, Ricotta and Blue Cheese) Ravioli which was absolutely delectable.

Their freshly made Chicken Meatballs were also amazing while I can see why their Prawn Carbonara is so popular.

The prawns and pasta were cooked to perfection while the cheesy sauce was oozing with flavour. And then we were given their Four Cheese Pizza as well as their Chicken Bacon Pizza with Olives.

By the time I had nibbled on the these dishes I had no room for the Four Cheese Pizza but from what Asintha says, it is extremely popular among her frequent customers.

Having tried out a number of their dishes, it is safe to say, that Pasta Hut does not skimp on ingredients which therefore leaves you feeling completely satisfied as every bite you have leaves you with this amazing burst of flavours in your mouth.

Pasta Hut is a WiFi zone and they have an open kitchen which allows you to see first hand what goes on.  The friendly and homely atmosphere along with their delicious freshly made food made our experience at Pasta Hut a good one.
