Deepika Kodikara bakes the best brownies ever. No exaggeration here. I haven’t bit into such delicious, gooey, chocolatey goodness anywhere in Colombo especially when most dining establishments in town seem to think that serving a slice of chocolate cake seems to qualify as a proper brownie. Brownies are Deepika’s forté. She tells me that even though she bakes other items, the brownies are her number one hit and they’ve got good reason to be that hit. I delicately bit into a slice and after that, I’m not too sure I will be able to place faith in brownies from anywhere else. I like to think of the brownie as three different layers of indulgence. On top is the light brown crust with a generous dusting of icing sugar, which is followed by a gooey layer of brownie with a layer of crushed cashew nuts at the bottom. It is best eaten warm but even without the warmth, the brownie is perfect. “I just bake one standard type of brownie. Sometimes customers ask me to bake them without the nuts because they’re allergic to them. I do bake them without the nuts if requested but it just doesn’t taste the same,” she explains.
Deepika tells me that she has been baking for family and friends for the past two years. She started small and she doesn’t have a name for her range of baked goodies nor does she have a website or Facebook page advertising them, as most home-run bakers do. “It’s all very simple. People just call me and place their orders. I have been baking ever since I was 12 and
I remember experimenting a lot back then.”
Magic brownies aren’t all Deepika bakes. She creates amazingly delicious meringue. It is crisp, light and melts on your tongue. Strangely, her meringue is quite firm and does not crumble into tiny bits as soon as you bite into it. Customers can choose from passion fruit curd topping or fresh strawberries. She uses whipped cream either way. A large meringue with whipped cream and generous drizzling of passion fruit curd topping will cost you Rs.1800 while the meringue with whipped cream and fresh strawberries is priced at Rs.3000. Fresh strawberries are expensive, says Deepika and this explains the price tag. She whips up cheesecake, made out of curd and yoghurt and served with a blueberry or passion fruit sauce. This, she says is lighter and cuts back on calories because the primary ingredient isn’t the cream cheese.
She bakes cupcakes but just in three varieties which are chocolate, vanilla and vanilla chocolate chip. A dozen cupcakes is the minimum order. Deepika does a mean dessert which involves meringue, mousse and cake and this is topped with a chocolate ganache.
This has to be ordered two days in advance while orders for the rest of the items in her range can be made 24 hours earlier.
