With Mother’s Day around the corner, what better way to show your mum your thanks and appreciation by baking her a hot hot batch of chocolate loveliness in the form of these cookies filled with chocolate and …of course loads of love.
These chocolate cookies are an easy dish to make with your kids for any Dad that’s not all too familiar in the kitchen. Think of all the brownie points you’ll score. Happy Mother’s day to one and all!
Ingredients
3/4 cup of white flour
1 tablespoon baking powder
1 teaspoon salt
6 ounces milk chocolate, coarsely chopped
7 ounces dark chocolate, coarsely chopped
1 stick unsalted butter
6 large eggs
2 3/4 cups sugar
1 1/2 teaspoons vanilla extract
1 1/2 cups Pebbles chocolate chips
Directions
1.Turn the over on to 220 degrees and get an older child to line the baking trays with baking paper.
2. In a large mixing bowl sift the flour, baking powder and salt and keep aside till needed.
3. Fill a small saucepan with water and put it on the stove to boil. Using a glass bowl that will sit on top of the saucepan, melt the chopped milk chocolate, chopped dark chocolate and the butter over low heat, stirring constantly under the chocolate is all melted and the butter is incorporated. Take it off the store and let it cook slightly.
4. Using a hand mixer beat together the eggs, sugar and vanilla on medium-high speed until light in texture and thick should take about 3 to 4 minutes.
5. To this mixture now add the chocolate mixture and blend thoroughly.
6. Once that is mixed, take the dry ingredients you made earlier and incorporate until the ingredients are thoroughly combined. Throw in your chocolate Pebbles and fold through, no need to blend. It will be nice to have little bites of chocolate when you bit into your cookies.
7. Using a ice cream scoop, fill it to up to quarter level with dough and drop on to the prepared cookie sheet, leaving 3 inches between the cookies.
8. Bake for about 14 minutes at gas mark 220 or until the cookies are cracked on top.
