Does your fruit bowl contain a few old bananas that are not rotten but are over ripe for the likes of little ones who go YUCK at the sight of one? Do not worry these over ripe bananas need not go in the bin, instead they can be turned into super healthy banana bread which will fill up little tummies with vitamin filled richness.

They can also serve as a quick healthy breakfast and a slice in the school lunchbox will definitely not go to waste. All the things you can do with a few over-ripe bananas are incredible. Enjoy!

 

INGREDIENTS

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla essence
1 teaspoon baking powder
Pinch of salt
1 1/2 cups of all-purpose flour

 

Method


This is such an easy recipe to do that you don’t even need a mixer!. Hooray less washing up!.

First of all before you start combining your ingredients together, preheat your oven to 175 degrees. Then in a large bowl using a wooden spoon mix the butter into the mashed bananas. Since it doesn’t involve major appliances you can even get your older children to help in the mixing and stirring.

Now into the mixture stir in your sugar, egg and vanilla extract. Sprinkle the baking powder and salt and mix in thoroughly. Lastly fold in the flour and give it one last good mix.

Take a 4 X 8 inch loaf pan and butter the sides thoroughly. Pour in your mixture and place in the oven for about an hour. Once done, place on a rack to cool, remove from pan and slice to serve.

You can also stir in some pieces of cooking chocolate into your uncooked mixture. Once cooked these lovely melted goblets of chocolate will burst in your mouth at every bite.

Cooking banana bread will envelop your house with warm welcoming smells and will have the family running to the table for a slice!
