views 2379Back to chocolate this week! Another relatively easy recipe to put together which is guaranteed to look impressive on your serving platter, with a taste to match. Try it out and judge for yourself!

Ingredients
(meringue discs)
5 eggs
separated
350g sugar
1 tbsp
corn flour
150g almonds, finely ground
(Filling and
decoration)
350g dark chocolate
200ml whipping cream
75g almonds
Cocoa powder for dusting
Method
1. Line 3 flat baking trays with baking paper and draw a circle of 9 inch diameter on each piece of baking paper. If you have only 1 such baking tray, then bake one circle of meringue at a time. You will need 3 in total.
2. Whisk the egg whites until stiff and standing in peaks. Add the sugar gradually, whisking between additions until thick and glossy. Fold in the corn flour and ground almonds until evenly combined. Divide into three portions and transfer each portion to the three circles drawn on the baking paper. Flatten with the back of a spoon to form discs.
3. Bake in a preheated oven, 150 degrees C (300 F) for approximately 1 hour or until light golden brown and dried out. Remove from the oven and transfer to a wire rack to cool completely. Peel away the baking paper once cooled.
4. Melt the chocolate over a pan of gently simmering water. Add the 75g of almonds (for decoration) into the melted chocolate and coat completely. With a fork, remove each chocolate coated almond and place on baking paper to set. Add the cream to the remaining melted chocolate and mix to combine. Cool and chill for an hour.
5. Take the chocolate mixture out of the fridge and beat till light and fluffy. Place one meringue disc on your serving platter and spread half the chocolate mixture over it. Place the second meringue disc on top of the chocolate and repeat the process.
6. Lastly decorate the topmost layer of meringue by dusting cocoa powder through a sieve over it. Place the chocolate coated almonds on top, in the most creative or decorative manner you can think of!
7. Chill for about an hour, then slice into wedges and serve.
