The Startup Cook – Bread Pudding

My affection for Bread Pudding is a recent one. When I was a child, even the thought of bread made in to a sweet pudding was disgusting. This silly sentiment continued until last year when I decided to make a slightly complicated version of a Bread Pudding. It was well…. delicious! This recipe is a very simple Bread Pudding. It’s quick, easy and not excruciatingly sweet (like Bread Puddings you find in some bakeries). More importantly it’s one of those desserts that make you feel all warm and happy – when making and when eating. It’s definitely one soul pleasing dish.

Ingredients

4 slices of (sandwich) bread
2 eggs
1 1/4 cups of milk
1/3 – ½ cup of sugar
1/3 cup of raisins
3 tbs of butter
2 tsp of vanilla essence
1 tsp of cinnamon powder
1tbs of brown sugar
1 tsp of white sugar

Directions

Preheat the oven at 175 Celsius. Prepare a baking dish and set aside.

Cut bread slices in to small squares and set aside.

Pour milk in to a heavy based pan, add the sugar, butter and melt on a very low heat.

As soon as the butter has melted take it off the heat.

In a mixing bowl whisk together two eggs.

Whilst whisking the eggs, pour half a cup of the butter-milk mixture in to the bowl and whisk briskly for a few minutes.

Pour the rest of the butter-milk mixture in to the bowl, add the vanilla, cinnamon and whisk briskly until it’s well combined.

Place the bread squares and the raisins in the mixture, and stir gently to coat.

Pour the mixture (along with the bread squares & raisins) in to the prepared dish.

Mix the brown sugar and white sugar in a saucer. Dust the sugar combination over the bread mixture.

Bake for 40 - 45 minutes.

Disasters, Warnings and Tips

Scatter some raisins on top of the pudding whilst it’s cooling down.

My father recommends that you serve this with some strawberry jam.

Do not put raisins on top of the pudding mixture before you bake - the raisins will burn.

Make this on a rainy day and have it warm. YUM!

It’s VITAL that you DON’T let the milk-sugar-butter combo boil.

Burnt raisins taste weird. Yuck.
