Acclaimed pastry chef Jason Licker is all set and excited to participate at the Fairway Galle Literary Festival 2017. He is the winner of Iron Chef Thailand, and is truly passionate about pastry, life and adventure. Today, Life Online speaks to Jason Licker in a short email interview, weeks before FGLF 2017 kicks off!
How do you feel about participating at the Fairway Galle Literary Festival 2017?
I am extremely excited and humbled to be invited to the Fairway Galle Festival. This is my first time visiting Sri Lanka and I am looking forward to embracing the culture, making new friends and eating as much as I can.
What would you say is your most favourite type of cuisine?
It is quite difficult to pick one favourite cuisine, but my favourite things to eat include bold flavours in which you utilize your palate. I thoroughly enjoy dishes where you hit atleast to two or more of the taste buds on your palate (sweet, salty, sour and bitter). For example, I love lemon meringue pie, the sweet and sour flavours are addictive.
What single ingredient can't you do without in your kitchen?
The single ingredient I can't live without is salt. Even just a few grams can bring out the flavour in anything.
What does cooking mean to you?
Cooking is life to me. Cooking is the canvas in which I can express my emotions and create pastry art. When you cook with love, everything tastes better.
